The sirloin steak is a butter-tender piece of meat covered with a small strip of fat along the top edge which acts as a flavour diffuser. The sirloin is cut from the rump end of the striploin, found along the spine in the hindquarter; running from the ribs to the rump. This muscle does less work than the rump, resulting in leaner meat, with less connective tissue making it notably tender and juicy.
