The minute steak is a thin cut of dry-aged beef, taken from the animal's silverside. As it's thin it really only needs to cook for a minute each side, hence why it's called the minute steak! We cook these from frozen so we can still get a good sear and rare/medium rare in the middle, perfect for a stir fry!
